Germinated soybean protein hydrolysate: ionic gelation encapsulation and release under colonic conditions

The objective of this work was to develop a formulation and encapsulation method for the delivery protein hydrolysate colon. Alginate (A) xanthan gum (XG) were selected as wall materials. Three formulations used encapsulate from germinated soybean (PHGS) by ionic gelation followed freeze-drying. During in vitro digestion, microstructure monitored ESEM, site-specific release beads confirmed fermentation under colonic conditions with human inoculum. All probed resist preserving their structure at end digestion. during digestion lower containing A+XG than those only A.
